I made this dish years ago after college with my best friend. Had some hot dogs left over from a barbecue and had to make it, as I haven’t had it in a long time!

Ingredients

1/8 to 1/4 cup olive oil (need to cover the bottom of large skillet)

6 potatoes, peeled and sliced thinly (you can also use 10-12 small red-skinned potatoes, skin on; this is what I did)

1 large red bell pepper, seeds and pith removed, chopped

1 large green bell pepper, seeds and pith removed, chopped

1 large onion, peeled and chopped

1 teaspoon oregano or Italian seasoning

6-8 wieners or other pre-cooked sausage, cut into 1/2 inch rounds

salt and pepper to taste (fresh pepper from the grinder is best)

Optional adders:

1/4 hot pepper flakes (add this if you like a kick)

10-12 mushrooms, quartered

Directions

Heat oil in large skillet over medium-high heat. Add the potatoes and cook for ten minutes, stirring often, but letting them sit to brown a bit.  Add the peppers and onions and mix thoroughly.  Sprinkle in all seasonings and sliced wieners.  Cook for 15-20 minutes, stirring, until potatoes are done to your liking.  If you are adding mushrooms, toss them in for about 3 minutes, just before the potatoes are almost done. Add additional salt and pepper to taste. (If you want to speed up the process, boil or microwave the potatoes for a few minutes before you begin frying.)  Makes about 4 servings.
