Sorry I haven’t been very active in posting updates. Roy and I have stayed active in our “bubble” and tried to stay in contact with family and friends.  Last year and this year have gone by quickly, despite the pandemic. We both had our second vaccine shots last week, so we are hopeful for a gradual return to “normal,” although I am not sure it will be the same as it was pre-pandemic. We miss family and friends so much and hold out hope that we can begin to travel and see loved ones yet this year. Fingers crossed.

Without the ability to get out in 2020 and so far in 2021, I have concentrated on my health and reading. Surprisingly, I have not focused on writing projects, but I do have several bumping around. I’ve tried to focus on improving myself as a writer by reading the work of others.

I have been cooking and baking a lot as well and will have to remember to post some more recipes.  Last night, I made a breaded chicken cutlet stuffed with Boursin, thinly sliced ham and basil along with roasted asparagus. The dish got a thumbs up from Roy, so I was pleased.

We actually have been out to dinner several times, eating outside, particularly at a local favorite, Decker Family Kitchen. During the shutdown, we got takeout from there once a week. The owner, Graham, is a friend.  When I couldn’t get flour for my baking during the early days of the pandemic, I got it from him in five lb zip bags. Roy was never deprived of homemade sourdough bread!

Just wanted to check in and hoping you are all well and we can be out and about in the world soon. Warm Regards,  Phyllis
