I am always trying to make the perfect sourdough loaf for my husband. I am gluten-free, and I SO wish that I could take a bite of this bread. I was trying to figure out how many I have baked over the years, and it certainly hundreds, maybe even close to a thousand. However, it is NEVER a given that the loaf is going to turn out.  I guess that is why I find baking so fun because you just don’t know how the loaf will be. Does it have good crumb (the holes)? Is it crusty? How is properly proved or what it under or over-proved? Did it get the rise I wanted with proper oven spring?

I shared this one because it is as close to perfect as I have been able to achieve. I should share some not-do-perfect ones because there have been PLENTY of those.  Happy Baking to you!
