What fun this was to make for breakfast!  I used this Cooking Light recipe, link below.

I just made a few small changes.  I added blueberries and substituted toasted sliced almonds for the pistachios and gluten-free flour for regular flour.

It was fantastic to see it puff up in the oven and it was really easy and fast to make.  I believe mixing the batter in the blender really helps it to bubble up nicely.
