I found that the hummus I made (recipe on previous blog) really stiffened up in the fridge, so I thought I would try to add some new flavors.  One of my favorite kinds of store-bought hummus is lemon/cilantro (or coriander in the U.K), so I added the juice and zest from a whole lemon, chopped fresh cilantro and some stock to thin it out.  I mixed it in the food processor for just a minute or two. It was excellent!  I think I will use the original hummus I made (there is so much of it!) and thin it out and add some more flavors in the coming days…I’m thinking about spinach, peppers, olives, etc.
