I was craving peanut butter cookies yesterday, so made them–some with chocolate chips and some without.  Peanut butter is not my husband’s favorite, but he enjoyed these cookies!

I preferred them with the chocolate chips (my husband, too), so will make them again, all with the addition of chocolate.

Ingredients

3/4 cup firmly packed brown sugar

1/4 cup butter softened

3/4 cup creamy peanut butter

2 large eggs

1 teaspoon gluten-free vanilla

1 cup Gluten-Free Flour Blend (I used King Arthur)

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/3-1/2 cup dark chocolate chips (depends on how much chocolate you want)

How to make

1 STEP 1
Heat oven to 375ºF. Place parchment paper on two cookie sheets.

2 STEP 2
Combine brown sugar, butter and peanut butter in bowl. Beat at medium speed until creamy. Add eggs and vanilla; continue beating until well mixed. Add gluten-free flour blend, baking powder, baking soda and salt; beat at low speed until well mixed. Add in chocolate chips.

3 STEP 3
Shape dough into 1-inch balls. Place 2 inches apart onto cookie sheets with parchment paper; if desired, flatten balls in criss-cross pattern with fork. Bake 10-12minutes or until edges are lightly browned.
